Chorizo Breakfast Protein Scramble

One of my favorite ways to make sure I’m able to eat at home and get adequate protein in within a day is to make and keep generalized/bulk cooked items at home. Today’s recipe is an amalgamation of things I like to keep around the house and one of my favorite mix & match weekly meal items: lean ground beef  “chorizo.” 

The breakfast scrable itself consists of this bulk homemade chorizo which I’ll explain later on in the. article and just two other items:

3 Eggs

2oz Fat Free Cream Cheese (I had some in the fridge left over from the protein alfredo recipe) 

8oz Beef Chorizo

Reheat your chorizo in a pan, add eggs and scramble, when the eggs are soft cooked add the cream cheese diced up and heat until it’s slightly melted! 

Makes 2 servings. Macros for the full recipe are as follows. Youl could also modify the eggs, cheese, and meat ratios to alter the nutritional status depending on your needs/wants.

Lean Beef Chorizo Recipe

For the Chorizo itself you’ll need the following:

  • 1lb 93% Lean Ground Beef 
  • 2-3 TBS Paprika 
  • 1 TBS Ancho Chili Powder
  • 1/2 TBS Cumin
  • 1-2 tsp Cinnamon
  • 1 pinch Clove 
  • 1/4 can Chipotle Peppers in Adobo Sauce 
  • 1-3 Minced Garlic Cloves
  • 1/2 tsp Salt (to taste)

Start by mixing all your dried spices together in a bowl then add your ground beef, chipotle peppers + sauce, and garlic. 

Sautee until fully cooked and use however you’d like!
